Sprouting itself isn’t new. In fact, it’s as old as plants themselves – it’s the natural process all seeds go through, releasing the nutrients inside to feed new, germinating shoots. Sprouting for nutrition is much newer. Without sprouting, grains and seeds can pass through the human digestive system largely unchanged, their nutritional benefits unrealized. Organic Buckwheat – First point to note: despite its name, buckwheat is actually a close cousin to rhubarb and is actually wheat free and gluten free. It’s also one of the most complete sources of protein on the planet, containing all eight essential amino acids. This makes it perfect for people with diabetes and those who want to cut down on their carbohydrates and balance their blood sugar levels. It’s also a good option for people who have varicose veins or hardening of the arteries because it’s full of rutin, which helps strengthen capillary walls. Sprouted buckwheat is also rich in lecithin, which helps soak up "bad" cholesterol and prevent it from being absorbed, and high in bioflavonoids, flavonols and co-enzyme Q10.
